Caldo de Vegetales con Pollo

 Ingredients: 4 Bone-In Skin-On Chicken Thighs 2 Tbsp Better Than Boullion 1 HEB Caldo Kit 3-4 Galic Cloves 1/4 Cilantro Instructions: In a large stock pot, bring one gallon of water to a boil. While the water heats up, wash and trim the chicken thighs and chop vegetables into 1-2 inch pieces. Add bullion, onions, garlic and celery to the pot. Boil for 15 minutes.  Add root vegetables and cilantro to the pot. Boil for 20 minutes.  Add in soft vegetables and turn off heat. The soft vegetables will cook with the residual heat, about 20 minutes. Serve with lemon and red rice. Source:  Caldo de Pollo - YouTube

Quick & Easy Pancakes

Ingredients: 1 egg 1 cup milk 2 Tbsp oil 1 tsp vanilla 1 cup sifted self-rising flour Instructions: In medium bowl, beat egg with wire whisk until fluffy. Stir in remaining ingredients just until flour is moistened (batter will be slightly lumpy); do not overmix or pancakes will be tough. For thinner pancakes, stir in additional 1 to 2 tablespoons milk.  Heat griddle at 375°F until drops of water sprinkled on it evaporate noisily.  Working in batches, pour 1/8 cup batter (or 1/4 cup for larger pancakes) onto the griddle for each pancake. Cook until bubbles begin to form on top, 2 to 3 minutes. Flip with a spatula and cook until golden brown on the other side, about 1 more minute. Butter Flour Tortillas

Ingredients: 1 cup boiling water 1 stick of salted butter, sliced 3 cups all-purpose flour 1 tsp Salt Instructions: In a pouring vessel, combine salted butter with boiling water and mix until mostly dissolved. In a mixing bowl, combine flour, baking soda and salt.  Slowly add the wet ingredients and mix the dough for about 5 minutes. Transfer dough to surface and knead for 5 minutes. Make and roll 50g dough balls. Coat with oil and cover with plastic wrap. Let rise for 30 min. Preheat a non-stick skillet at 375°F. Sprinkle flour on a clean surface and try to roll out the balls into rounds. Cook the tortillas until puffy, then turn again until cooked. Yields 15-16 tortillas. Instant Pot Salmon and Rice

Ingredients 1 cup of long-grain white rice 1 1/4 cups of water 1 cup mixed frozen vegetables 1/2 tsp of salt 2-3 frozen salmon fillets 1 tsp Seasoning Mix (your choice) Instructions Rinse rice thoroughly in a fine mesh sieve until the water runs clear.  Mix the rice, water, frozen vegetables and salt in the bowl of a 6qt Instant Pot.  Lay the frozen salmon on top of the mixture and coat with seasoning mix.  Lock the lid and cook for 4 minutes at high pressure (no keep warm).  When the cooking time is up, quick release the pressure after 5 minutes.  Transfer cooked salmon and rice to a warm plate and serve. Easy Marinade

Basic Marinade Recipe 1 part olive oil 1 part lemon juice 1 part any spice mix Mix all the ingredients inside a quart sized zip lock bag until thoroughly combined. Air Fryer Frozen Salmon

Ingredients: 2 frozen skinless salmon fillets      Seasonings: 2 tsp olive oil 1 tsp lemon juice 1 tsp Dijon mustard 1/2 tsp kosher salt 1/2 tsp garlic powder 1/4 tsp black pepper 1/4 tsp cayenne pepper Instructions: Preheat air fryer to 390°F. Whip together the seasonings in a small bowl and brush mixture onto each fillet on both sides. Place frozen fillets in a single layer and cook for 12-18 minutes, turn halfway. Quick & Easy Instant Pot Chicken

Quick Cooked Chicken Ingredients: 2-4 frozen chicken breasts 1 cup of water 2 Tbsp onion powder 2 tsp garlic powder salt and pepper, to taste Instructions: Place a trivet in the bottom of the pot. Arrange the frozen chicken breasts on the trivet, making sure pieces are not stuck together. Add the liquid over the chicken and sprinkle it with seasonings. Cover the lid on SEAL. PRESSURE COOK on HIGH for 12 minutes with KEEP WARM off. When done, allow the chicken to NATURAL RELEASE for 15 minutes. Remove the cooked chicken from pot. Shred it, chop it, slice it... prep it however you want!  Quick Tip: Don't waste the chicken broth!
