Instant Pot Salmon and Rice

Ingredients

  • 1 cup of long-grain white rice
  • 1 1/4 cups of water
  • 1 cup mixed frozen vegetables
  • 1/2 tsp of salt
  • 2-3 frozen salmon fillets
  • 1 tsp Seasoning Mix (your choice)

Instructions

  1. Rinse rice thoroughly in a fine mesh sieve until the water runs clear. 
  2. Mix the rice, water, frozen vegetables and salt in the bowl of a 6qt Instant Pot. 
  3. Lay the frozen salmon on top of the mixture and coat with seasoning mix. 
  4. Lock the lid and cook for 4 minutes at high pressure (no keep warm). 
  5. When the cooking time is up, quick release the pressure after 5 minutes. 
  6. Transfer cooked salmon and rice to a warm plate and serve.
